Ingredients: Glucose syrup, sugar, water, flavorings, colors:FD&C Blue#1, FD&C Yellow#5, Stabilizer: gum arabic, Acidity regulator: citric acid Preservative: potassium sorbate.
Applications: Used to flavor gelato, ice cream, cakes, mousse, fillings, and semifreddo.
Storage Conditions: Dry and cool (68-72ºF, 20-22ºC) Stir well before each use. Protect from light and heat. Dosage: 40-50 g/ each kg of gelato base 40-50 g/ each kg for pastry products Mix this paste into the other ingredients and allow to stand for 10-15 minutes, then proceed. Best used in addition to fresh or frozen fruit.
