Bloom: 170 Dosage: 2.5g Gelecta is equivalent to 1 silver gelatin sheet. Instructions for adding directly to recipe WITH pre-hydration: Mix with warm liquid (30°C/86°F) using a whisk before adding to the other ingredients. Instructions for adding directly to recipe WITHOUT pre-hydration: Use the quanity required directly in preparations already containing milk, cream, water or purée . Mix at a temperature of at least (40°C/104°F).
