France produces more Comte than any other cheese. The firm and supple paste gives way to a nutty, tangy and well balanced fruit flavor and aroma. Slightly salty. Used in many classic dishes. 140 gallons (1120#) of milk produces 100# of Comte. Beverage suggestions: Big reds, red Burgundies; fruity reds such as Beaujolais.
