Applications: For preparation of lemon curd filling.
To make lemon tarts or any lemon cream dessert. Base mix powder 500 g. (17.64 oz.) Water 500 g. (17.64 oz.) Butter 100 g. (3.53 oz.) Mix powder with water and bring to a boil. Remove from heat and stir in butter. Continue mixing until smooth. Pipe and refrigerate. Yield: 1 kg (2.2 lb)
