Byzantine Country Olive Mix is a classic blend of five varieties of naturally-cured olives (Kalamata, Ionian Green, Amfissa, Cracked Green and Atalanti) that is accented by a sweet wine vinegar brine with a pinch of classic Greek herbs. Fresh, unpasteurized olives are not "cooked" leaving the olives with the best possible texture and flavor. They have a bright, natural color of the fresh fruit, with a firm, crunchy bite, and bold fresh olive flavor.
