For cooked fruit filling: dock; fill; bake at 185ºC/ 265ºF until fully baked. To bake with no filling: dock; line with parment; weigh down; blanch at 200ºC/ 390ºF for 5-10 minutes until edges set; remove parchment and weight; fill; bake at 185ºC/ 265ºF until fully baked; cool; fill.
