Fresh Scottish salmon fillets smoked over hickory by a local artisan. Never frozen. Nutty, buttery flavor. Lighter smoke. Cold smoked (<55ºF) over whole hickory logs. Traditional cure applied by hand for 24 hours. Incredibly fresh. NOT sliced.
