Do the favorites change or evolve much over the years? Probably not. But we do see chefs and operators taking these classics in different directions to satisfy the desires of their clients. Chefs offer versions that are lower in calories, variations of the protein ingredients, aloternate presenttions to reduce carbohydrates, etc. We also see the trend towards using these traditional sandwiches as a basis to develop a great signature item. By focusing on what elements make these sandwiches perrenial favorites, chefs can replicate those elements with all new ingredients.
