Truffle Croquette

Delight in the luxurious taste of our Black Truffle Croquettes, a gourmet treat that's crispy on the outside and irresistibly creamy within. Infused with the rich, earthy essence of black truffles, these croquettes offer an elevated twist on a classic favorite. Fried to golden perfection, each bite reveals a delectable, aromatic filling that tantalizes the senses. INGREDIENTS 
7.3 oz flour
4.6 oz butter
0.1 oz pepper
 2 qt milk
11 oz gruyère
6.6 oz parmesan
0.5 oz salt
1 can. truffle peeling  
1 oz parsley

METHOD:
Melt the butter and stir in the flour. Cook the mixture on low heat for about 10 minutes stirring constantly to avoid burning.
Bring the milk to a boil then add it to the flour mixture. Season with salt and pepper. Cook the mixture for about 20 minutes stiring constantly to avoid scorching on the bottom of the pot.
Cook the mixture until it is thick and has no raw flour flavor. Add the mushrooms and stir well to mix thoroughly.
Turn the heat off, finish with the cheese, stir constantly until it is completely melted.

Strain and wash the truffle peeling
Chop  in medium size the truffles with a knife 

Prepare a half sheet tray greased with a non stick spray
Line the tray with parchment paper

Add the truffle to the hot croquette mix and stir with a ruber spatula.  Taste for seasoning. 

Poor the truffle croquettes mix in the sheet tray and make sure the surface is flat using a metal spatula 

Let cool down or place in a blast chillers 

Freeze over nights
