INGREDIENTS
225g Sugar
225g Pastry 1 Glucose Syrup
170g Water
44g Cuisine Tech Italgel Fast CT1095
8g Cuisine Tech Citric Acid
30g Amifruit Orange Paste - or any flavoring paste
PM Pastry 1 Coloring gel
METHOD:
Combine gelatin and water in a container.
Combine the glucose syrup, sugar in the saucepan. Stir gently to combine. Bring to a simmer, once simmering, wash down the sides of the pan with water using a clean pastry brush.
Remove the mixture from the heat and stir in your citric acid and gelatin mixture with spatula util gelatin is melted.
Divide your mixture into different bowls and add in any coloring and flavorings that you want.
Let the mixture 5 to 10 min and allow the mixture to clear and foam to collect at the top.
Spray your molds lightly with some oil and wipe the excess. Poor your mixture into your molds.
Let your gummy bears chill in the fridge for 6H until the bears are set but 24H is best. Once they are set, they can be stored at room temperature
